Fort Simon Cabernet Sauvignon 2020
A deep ruby hue introduces this classically styled wine. Aromas of dark berries and cassis are layered with a touch of leathery spice. The palate follows with notes of leather and dried dark berries, complemented by a subtle hint of sour cherry that lingers on a cranberry-accented finish. Elegantly structured, this wine offers excellent aging potential and can be enjoyed through 2030.
Winemaker's Comment:
This Cabernet Sauvignon is a true expression of precision winemaking and the unique Stellenbosch terroir. Hand-harvested from carefully selected vineyards, the grapes are fermented in open-top barrels to ensure gentle extraction of color, tannin, and flavor. Regular punch-downs during fermentation enhance complexity while preserving elegance. The wine is matured for 25 months in 300-liter French oak barrels, with 85% new oak adding layers of subtle spice and structure. Each step in the process is meticulously overseen to craft a wine that balances power and finesse, showcasing the exceptional quality of the vintage.
